Chocolate chip muffins

Whether as a quick bite at any time, for breakfast or dessert..muffins are always a good idea! Other than cupcakes they need no icing, therefore don’t make such a mess when eating and you might feel not as naughty as when eating a cupcake that screams sugar and fat only by how indulgent it looks 😀

But muffins aren’t any less wonderful an indulgent than cupcakes, plus you can definitely make them even sweeter by adding whipped cream for example. I topped these with a bit of icing sugar, just to give them a nice touch on top 🙂

chocolate chip muffins


Ingredients

  • 2 cups flour
  • 2 tsps baking powder (if you don’t use self rising flour)
  • 1 cup sugar
  • 1/2 tsp salt
  • 1/3 cup oil
  • 2 eggs
  • 2/3 cups greek yoghurt
  • 1 cup chocolate chips

optional

  • lemon juice
  • icing sugar

Tips, hints and warnings

None, these are so easy that practically nothing could go wrong! 😀

Directions

  • Mix all dry ingredients (flour, sugar,salt and if needed baking powder)
  • In another bowl mix all wet ingredients (oil, eggs and yoghurt)
  • Combine both mixtures and mix until just combined
  • Fold in you chocolate chips
  • Prepare a muffin tray with muffin liners
  • Distribute the batter evenly between all cups
  • Bake for about 20 minutes at 200 °C
  • When they are finished let them cool a bit, brush a little bit lemon juice on each and lightly cover with icing sugar

Finished already! You see, it really isn’t rocket science, everybody can do this 🙂 Enjoy!
